Is there a product that can connect RCA (red / white) cables, allowing you to remotely control the volume? My stereo system is old and Dosn't support remote controls. Thanks

Generally – no. The volume control is performed by the amplifier. You do not want to reduce line-level signals (in red / white cables) because you will trash the signal.
